Description
This Potsticker Soup is a rich, flavorful, and warming Chinese-inspired soup made with ground pork, Napa cabbage, shiitake mushrooms, scallions, ginger, garlic, and coconut aminos in a savory dark broth. It’s an easy one-pot meal that’s packed with classic potsticker flavors and is Paleo, AIP, Keto, Whole30, and gluten-free.
Ingredients
- 4 cups meat stock, broth, or bone broth
- 1¾ pounds Napa cabbage, thinly sliced and chopped into bite-size pieces
- 1 pound ground pork
- 7 ounces shiitake mushrooms, stems discarded and thinly sliced
- 1 bunch scallions, whites and greens separated and sliced
- 2 tablespoons coconut aminos
- 2 tablespoons fresh ginger root, freshly grated or minced
- 2 cloves garlic, crushed or minced
- 2 teaspoons sea salt
- ½ teaspoon ground white pepper
- 2 tablespoons additional fat, as needed, based on rendered pork fat
Instructions
- Heat a large skillet or broad shallow pot over medium-high heat. Add the ground pork, 1 teaspoon sea salt, and white pepper. Cook, breaking up the meat with a spatula, until no pink remains. Reduce the heat as needed while cooking. Remove the pork with a slotted spoon and set aside, keeping the rendered fat in the pan.
- Check the amount of fat remaining in the pan and add additional fat as needed to equal 2 to 3 tablespoons total. For non-AIP diets, toasted sesame oil can be used. Reduce the heat to medium.
- Add the sliced Napa cabbage and ½ teaspoon sea salt. Cook for about 15 minutes, stirring and moving the cabbage around every 5 minutes so it cooks evenly.
- Add the sliced shiitake mushrooms and the remaining ½ teaspoon sea salt. Cook for another 5 minutes, stirring every few minutes.
- Add the broth, cooked pork, scallion whites, ginger, and garlic. For Keto, omit the scallion whites. Stir well, bring to a simmer, cover, reduce the heat, and slowly simmer for 5 minutes.
- Turn off the heat and stir in the scallion greens and coconut aminos. Reserve a few scallion greens for garnish if desired.
- Ladle the soup into bowls and serve hot.
Notes
- For AIP, replace the ground white pepper with ground ginger.
- For Keto, use only the green parts of the scallions and omit the scallion whites. Garlic is optional.
- The additional fat needed depends on how much fat is rendered from the ground pork. For non-AIP diets, toasted sesame oil adds extra flavor.
- Use a large, low, broad soup pot or deep sauté pan that can comfortably hold all the ingredients and broth.
- Serve garnished with extra sliced scallion greens for a fresh finish.
