Ingredients
- Crust
- 15.25 ounce box yellow cake mix
- 1/2 cup butter, melted
- 1 large egg
- Filling
- 8 ounces cream cheese, room temperature
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 15 ounces canned pumpkin puree
- 1/2 cup butter, melted
- 3 large eggs
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F (180°C). Grease a 9×13-inch baking pan.
- In a medium bowl, mix cake mix, melted butter, and egg until well combined. Press mixture evenly into the prepared pan to form the crust.
- In a separate bowl, beat cream cheese until smooth. Add pumpkin pie spice, vanilla, pumpkin puree, melted butter, eggs, and powdered sugar. Mix until fully combined and creamy.
- Pour the filling over the crust and spread evenly.
- Bake for 45–50 minutes, or until the edges are set and the center is slightly gooey.
- Allow bars to cool completely before slicing. Serve plain or top with whipped cream or powdered sugar.
Notes
- Do not overbake—the center should remain soft and gooey.
- Bars can be stored in an airtight container in the fridge for up to 5 days.
