Ingredients

  • Crust
  • 15.25 ounce box yellow cake mix
  • 1/2 cup butter, melted
  • 1 large egg
  • Filling
  • 8 ounces cream cheese, room temperature
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 15 ounces canned pumpkin puree
  • 1/2 cup butter, melted
  • 3 large eggs
  • 2 cups powdered sugar


Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9×13-inch baking pan.
  2. In a medium bowl, mix cake mix, melted butter, and egg until well combined. Press mixture evenly into the prepared pan to form the crust.
  3. In a separate bowl, beat cream cheese until smooth. Add pumpkin pie spice, vanilla, pumpkin puree, melted butter, eggs, and powdered sugar. Mix until fully combined and creamy.
  4. Pour the filling over the crust and spread evenly.
  5. Bake for 45–50 minutes, or until the edges are set and the center is slightly gooey.
  6. Allow bars to cool completely before slicing. Serve plain or top with whipped cream or powdered sugar.

Notes

  • Do not overbake—the center should remain soft and gooey.
