Description

A light and flavorful salad perfect for summer, combining the coolness of cucumber with creamy mozzarella, juicy tomatoes, and fragrant basil.


Ingredients

  • 1 Large Cucumber, thinly sliced
  • 8 ounces Fresh Mozzarella, sliced
  • 1 pint Cherry or Grape Tomatoes, halved
  • 1/4 cup Fresh Basil Leaves
  • 2 tablespoons Balsamic Glaze
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt, or to taste
  • 1/4 teaspoon Freshly Ground Black Pepper, or to taste


Instructions

  1. Wash and thinly slice the cucumber. Slice the mozzarella cheese.
  2. Halve the cherry or grape tomatoes.
  3. Arrange alternating slices of cucumber and mozzarella on a large platter or individual plates.
  4. Tuck the halved tomatoes between the cucumber and mozzarella.
  5. Scatter fresh basil leaves over the salad.
  6. In a small bowl, whisk together the balsamic glaze and olive oil.
  7. Drizzle the balsamic-olive oil mixture over the salad.
  8. Season with salt and freshly ground black pepper to taste. Serve immediately or chill for later.
