A light and flavorful salad perfect for summer, combining the coolness of cucumber with creamy mozzarella, juicy tomatoes, and fragrant basil.
Ingredients
- 1 Large Cucumber, thinly sliced
- 8 ounces Fresh Mozzarella, sliced
- 1 pint Cherry or Grape Tomatoes, halved
- 1/4 cup Fresh Basil Leaves
- 2 tablespoons Balsamic Glaze
- 2 tablespoons Olive Oil
- 1/2 teaspoon Salt, or to taste
- 1/4 teaspoon Freshly Ground Black Pepper, or to taste
Instructions
- Wash and thinly slice the cucumber. Slice the mozzarella cheese.
- Halve the cherry or grape tomatoes.
- Arrange alternating slices of cucumber and mozzarella on a large platter or individual plates.
- Tuck the halved tomatoes between the cucumber and mozzarella.
- Scatter fresh basil leaves over the salad.
- In a small bowl, whisk together the balsamic glaze and olive oil.
- Drizzle the balsamic-olive oil mixture over the salad.
- Season with salt and freshly ground black pepper to taste. Serve immediately or chill for later.

- For richer flavor, use burrata cheese instead of mozzarella.
- Optional: add bell peppers or red onion for extra color and texture.
