Description

These Roasted Garlic Mascarpone Mashed Potatoes are luxuriously creamy, buttery, and infused with sweet roasted garlic. Perfect as a comforting side dish for holidays or special dinners, these mashed potatoes combine Yukon Golds with rich mascarpone cheese for an extra-smooth, velvety finish.


Ingredients

  • 4 lbs Yukon Gold potatoes, peeled, partially peeled, or scrubbed with skin on
  • 2 whole bulbs garlic
  • 1 Tbsp extra-virgin olive oil
  • 1/2 cup Mascarpone cheese
  • 3/4 cup whole milk
  • 3 Tbsp butter
  • Fine sea salt, to taste
  • Fresh chopped chives or thyme leaves, for garnish
  • Cracked black pepper, for garnish


Instructions

  1. Roast the garlic: Preheat the oven to 400°F (200°C). Slice the tops off both garlic bulbs to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden. Let cool, then squeeze out the cloves.
  2. Cook the potatoes: In a large pot, add potatoes and cover with cold water. Add a generous pinch of salt and bring to a boil. Cook for 20–25 minutes until tender when pierced with a fork. Drain well.
  3. Mash the potatoes: Return the drained potatoes to the pot or a large mixing bowl. Add butter, roasted garlic cloves, and mascarpone cheese. Mash until smooth and creamy.
  4. Finish and season: Warm the milk slightly and stir it in gradually until desired consistency is reached. Season generously with fine sea salt and cracked black pepper to taste.
  5. Garnish and serve: Transfer to a serving bowl, sprinkle with fresh chopped chives or thyme, and serve warm.

Notes

  • Potatoes: Yukon Golds are preferred for their buttery texture, but Russets also work well for fluffier mash.
  • Make ahead: These mashed potatoes can be made a day in advance and reheated gently with a splash of milk or cream.
  • Extra flavor: Add a pinch of nutmeg or a drizzle of truffle oil for an elevated version.
