Description

A cozy, creamy Rustic Country French Garlic Soup inspired by the French countryside. Made with slow-roasted garlic, sweet onions, and fresh thyme, perfect for chilly evenings.


Ingredients

  • 10 garlic cloves (whole, unpeeled, ~50 g)
  • 1 large yellow onion, chopped (~150 g)
  • 4 cups vegetable or chicken broth (960 ml)
  • 1 cup heavy cream (240 ml)
  • 1 tbsp olive oil (15 ml)
  • 45 sprigs fresh thyme (or 1 tsp dried thyme)
  • 1 small baguette or 4 slices crusty bread (~150 g)
  • Salt and black pepper, to taste
  • Fresh herbs or croutons for garnish


Instructions

  1. Roast Garlic: Preheat oven to 400°F (200°C). Slice tops off garlic bulbs, drizzle with olive oil, wrap in foil, roast 30 min until golden and soft.
  2. Sauté Aromatics: Heat a drizzle of olive oil in a pot over medium heat. Add onions and cook 5–7 min until translucent.
  3. Add Broth and Herbs: Squeeze roasted garlic into pot. Add broth and thyme. Stir and bring to gentle simmer.
  4. Simmer: Let soup simmer 15–20 min for flavor development.
  5. Blend: Remove thyme sprigs. Puree soup using immersion blender (or in batches in regular blender) until smooth.
  6. Add Cream & Season: Return soup to pot, stir in heavy cream, season with salt and pepper.
  7. Serve: Ladle into bowls, top with fresh herbs or croutons, and serve with slices of warm baguette.

Notes

  • Roast onions along with garlic for deeper caramelization.
  • Use half-and-half or milk for a lighter version.
  • Substitute rosemary or bay leaf if thyme isn’t available.
  • Add extra broth to adjust thickness.
  • Flavors deepen beautifully if made ahead.
