Description

Salted Apple Pie Cookies are a delightful twist on traditional apple pie, combining the rich flavor of browned butter and sweet apple filling into soft, tender cookies.


Ingredients

  • 1 cup salted butter, browned
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tablespoon cornstarch
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup apple pie filling, diced


Instructions

  1. Melt salted butter in a medium skillet over medium heat, stirring continuously until browned. Transfer to a large bowl to cool 20 minutes, refrigerate 10 minutes if still warm.
  2. Whisk flour, cornstarch, baking soda, and baking powder in a separate bowl; set aside.
  3. Add granulated and brown sugar to cooled brown butter; mix until smooth. Add eggs one at a time, then stir in vanilla extract.
  4. Gradually fold dry ingredients into wet mixture until just combined.
  5. Wrap dough and refrigerate at least 1 hour.
  6. Preheat oven to 175°C (350°F). Line baking sheet with parchment. Scoop 3 oz dough balls, 2 inches apart, bake 12 minutes until edges are golden and centers soft.
  7. Press center of each cookie with a small glass, fill with 1 tablespoon diced apple filling. Cool on wire rack.
  8. Serve warm with milk or tea.
