Description
This saucy Hungarian red potato goulash is brimming with beef smoked sausage, tender red potatoes, and caramelized onions in a rich, savory rustic sauce.
Ingredients
- 1 (14 ounce) package beef smoked sausage, sliced
- Olive oil
- 2 tablespoons butter
- 2 onions, sliced
- 2 garlic cloves, pressed
- Salt
- ¾ teaspoon black pepper
- 2 teaspoons paprika
- ½ teaspoon smoked paprika
- 10 red potatoes, peeled and sliced
- 1 ½ cups chicken stock
- 1 tablespoon parsley, chopped
Instructions
- Heat 1 tablespoon olive oil in a large pan over medium-high heat. Add sausage and brown. Remove and set aside.
- In the same pan, add butter and another tablespoon olive oil. Add onions and cook until caramelized, about 8–10 minutes.
- Add garlic, salt, pepper, paprika, and smoked paprika. Stir until fragrant.
- Add sliced potatoes and mix well to coat.
- Pour in chicken stock, stir, and press potatoes down into liquid.
- Cover partially and simmer for 15 minutes, stirring occasionally.
- Uncover and cook another 10 minutes until potatoes are tender and sauce thickens.
- Return sausage to pan, add parsley, and mix gently.
- Adjust seasoning and drizzle with olive oil before serving.
Notes
- Use beef, turkey, or chicken sausage as preferred.
- Red or yellow potatoes work best for creamy texture.
- This dish tastes even better the next day as flavors deepen.
