Description

This saucy Hungarian red potato goulash is brimming with beef smoked sausage, tender red potatoes, and caramelized onions in a rich, savory rustic sauce.


Ingredients

  • 1 (14 ounce) package beef smoked sausage, sliced
  • Olive oil
  • 2 tablespoons butter
  • 2 onions, sliced
  • 2 garlic cloves, pressed
  • Salt
  • ¾ teaspoon black pepper
  • 2 teaspoons paprika
  • ½ teaspoon smoked paprika
  • 10 red potatoes, peeled and sliced
  • 1 ½ cups chicken stock
  • 1 tablespoon parsley, chopped


Instructions

  1. Heat 1 tablespoon olive oil in a large pan over medium-high heat. Add sausage and brown. Remove and set aside.
  2. In the same pan, add butter and another tablespoon olive oil. Add onions and cook until caramelized, about 8–10 minutes.
  3. Add garlic, salt, pepper, paprika, and smoked paprika. Stir until fragrant.
  4. Add sliced potatoes and mix well to coat.
  5. Pour in chicken stock, stir, and press potatoes down into liquid.
  6. Cover partially and simmer for 15 minutes, stirring occasionally.
  7. Uncover and cook another 10 minutes until potatoes are tender and sauce thickens.
  8. Return sausage to pan, add parsley, and mix gently.
  9. Adjust seasoning and drizzle with olive oil before serving.

Notes

  • Use beef, turkey, or chicken sausage as preferred.
  • Red or yellow potatoes work best for creamy texture.
  • This dish tastes even better the next day as flavors deepen.
