Description

Sausage Hashbrown Bites are warm, savory, cheesy breakfast bites made with breakfast sausage, shredded hashbrowns, cheddar cheese, and eggs. Baked in a mini muffin pan until golden brown, they’re an easy, satisfying option for breakfast, brunch, parties, or meal prep. Serve them warm with ranch, spicy ketchup, or hot sauce.

Ingredients

  • 1 lb breakfast sausage, mild, spicy, or maple
  • 3 cups frozen shredded hashbrowns, thawed
  • 1 1/2 cups shredded cheddar cheese
  • 2 large eggs, beaten
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon paprika or cayenne pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a mini muffin pan or line it as desired.
  2. Cook the breakfast sausage in a skillet over medium heat until fully browned and cooked through. Drain the excess grease and allow the sausage to cool slightly.
  3. In a large bowl, combine the cooked sausage, thawed hashbrowns, shredded cheddar cheese, beaten eggs, garlic powder, black pepper, and optional paprika or cayenne. Stir until evenly mixed.
  4. Spoon the mixture into the mini muffin cups, pressing each portion lightly so the bites hold together.
  5. Bake for 20–25 minutes, or until the tops are golden brown and the centers are set.
  6. Let the bites cool slightly before removing them from the pan. Serve warm with ranch, spicy ketchup, hot sauce, or your favorite dipping sauce.

Notes

  • Choose your sausage: Use mild, spicy, or maple breakfast sausage depending on your preferred flavor.
  • Thaw the hashbrowns: Thaw the frozen hashbrowns before mixing so the ingredients combine evenly.
  • Make them spicy: Add paprika or cayenne pepper for extra heat.
  • Check for doneness: The bites should be golden brown on top and set in the center before serving.
  • Serving ideas: Serve warm with ranch dressing, spicy ketchup, or hot sauce for dipping.
