Description

This Sausage Tortellini Soup is the perfect combination of creamy, savory, and hearty flavors. The tender tortellini, flavorful sausage, and fresh spinach make it a comforting dish that’s easy to prepare and loved by all.


Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (14-ounce) can diced tomatoes
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 3 cups fresh spinach, roughly chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (for garnish)


Instructions

  1. Cook sausage over medium heat until browned, breaking into small pieces. Drain excess grease if needed.
  2. Add onion and garlic, cook 2–3 minutes until softened and fragrant.
  3. Stir in diced tomatoes, chicken broth, Italian seasoning, and red pepper flakes if using. Bring to simmer.
  4. Add tortellini and cook 4–6 minutes until tender according to package instructions.
  5. Lower heat to medium-low. Stir in heavy cream and spinach, cook 2–3 minutes until spinach wilts and soup is heated through.
  6. Adjust salt and pepper as needed. Garnish with Parmesan and serve hot.
