Ingredients
- 1 pound Italian sausage (mild or spicy)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (14-ounce) can diced tomatoes
- 6 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 1 (9-ounce) package refrigerated cheese tortellini
- 3 cups fresh spinach, roughly chopped
- Salt and pepper to taste
- Grated Parmesan cheese (for garnish)
Instructions
- Cook sausage over medium heat until browned, breaking into small pieces. Drain excess grease if needed.
- Add onion and garlic, cook 2–3 minutes until softened and fragrant.
- Stir in diced tomatoes, chicken broth, Italian seasoning, and red pepper flakes if using. Bring to simmer.
- Add tortellini and cook 4–6 minutes until tender according to package instructions.
- Lower heat to medium-low. Stir in heavy cream and spinach, cook 2–3 minutes until spinach wilts and soup is heated through.
- Adjust salt and pepper as needed. Garnish with Parmesan and serve hot.
