Description
These protein-packed egg bites are a delicious and easy breakfast or snack. The cottage cheese adds creaminess and extra protein.
Ingredients
- 6 Large Eggs
- 1 cup Small Curd Cottage Cheese
- 1 tablespoon Milk (whole milk recommended)
- 1/4 cup Shredded Cheddar Cheese
- 1 tablespoon Chopped Onion, finely chopped
- 1/4 teaspoon Salt
- 1/4 teaspoon Black Pepper, freshly ground
- 1 tablespoon Chopped Chives (for garnish)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 6-cup muffin tin or use silicone muffin cups.
- In a medium bowl, whisk together eggs, cottage cheese, milk, salt, and pepper until well combined.
- Stir in shredded cheddar cheese and chopped onion.
- Divide the mixture evenly among muffin tin cups, filling each about 2/3 full.
- Bake for 20–25 minutes, until egg bites are set and lightly golden.
- Let cool slightly before serving. Garnish with chopped chives.
- Serve warm or at room temperature.
Notes
- For a spicier kick, add a pinch of red pepper flakes.
- You can experiment with different types of cheese and vegetables.
