Description

These protein-packed egg bites are a delicious and easy breakfast or snack. The cottage cheese adds creaminess and extra protein.


Ingredients

  • 6 Large Eggs
  • 1 cup Small Curd Cottage Cheese
  • 1 tablespoon Milk (whole milk recommended)
  • 1/4 cup Shredded Cheddar Cheese
  • 1 tablespoon Chopped Onion, finely chopped
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper, freshly ground
  • 1 tablespoon Chopped Chives (for garnish)


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 6-cup muffin tin or use silicone muffin cups.
  2. In a medium bowl, whisk together eggs, cottage cheese, milk, salt, and pepper until well combined.
  3. Stir in shredded cheddar cheese and chopped onion.
  4. Divide the mixture evenly among muffin tin cups, filling each about 2/3 full.
  5. Bake for 20–25 minutes, until egg bites are set and lightly golden.
  6. Let cool slightly before serving. Garnish with chopped chives.
  7. Serve warm or at room temperature.

Notes

  • For a spicier kick, add a pinch of red pepper flakes.
