Description

Cheesy and savory baked gnocchi with caramelized French onions, simmered in a rich onion-broth sauce and topped with melted Gruyere or Swiss cheese.


Ingredients

  • 1/4 cup white wine
  • Salt, to taste
  • 1 tbsp unsalted butter (room temperature)
  • 2 cups beef broth
  • Pepper, to taste
  • 1 tbsp fresh minced thyme (or 1 tsp dried)
  • 1 tbsp olive oil
  • 1 lb gnocchi (fresh or frozen)
  • 1 large sweet onion, thinly sliced
  • 810 slices French bread (for serving)
  • 1 cup shredded Swiss or Gruyere cheese


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet or Dutch oven over medium heat, melt olive oil and butter together.
  3. Add thinly sliced onion and cook for about 20 minutes until deeply caramelized and golden brown, stirring occasionally.
  4. Pour in white wine to deglaze the pan, scraping up browned bits. Add thyme and beef broth, then bring to a simmer.
  5. Add gnocchi and stir occasionally over medium heat until tender and sauce thickens, about 5–10 minutes.
  6. Season with salt and pepper to taste. Transfer mixture to a greased baking dish.
  7. Top with shredded cheese and bake for 20–25 minutes until cheese is lightly browned and gnocchi is bubbly.
  8. Cool slightly before serving. Serve with French bread slices on the side.

Notes

  • Slowly caramelizing onions enhances sweetness and depth of flavor.
  • Gruyere cheese adds a deeper flavor than Swiss, but both work well.
  • Perfect served with toasted bread for dipping.
