Slow Cooker Butternut Squash Soup with Curry and Ginger

Description

This slow cooker butternut squash soup is packed with flavor from curry, ginger, and warm spices like turmeric. It’s vegan, super creamy, and paleo and Whole30 compliant!


Ingredients

  • 1 medium butternut squash, seeded and chopped into 1-inch pieces
  • 2 tablespoons fresh ginger, roughly chopped (about a 2-inch piece)
  • 3 cloves garlic, minced
  • 1 yellow onion, chopped
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • Salt and pepper, to taste
  • 15 oz canned unsweetened full-fat coconut milk
  • 2 cups chicken stock or vegetable broth, plus more if needed
  • Cilantro, Greek yogurt, and/or roasted squash seeds for garnish, optional


Instructions

  1. Combine the butternut squash, ginger, garlic, onion, curry powder, cumin, coriander, turmeric, salt, pepper, coconut milk, and broth in a slow cooker.
  2. Cook on low for 6–8 hours or on high for 3–4 hours, until the squash is very tender.
  3. Use an immersion blender to blend the soup until smooth. Alternatively, carefully blend the soup in batches using a regular blender. If the soup is too thick, add more broth or water.
  4. Serve hot and garnish with cilantro, Greek yogurt, and/or roasted squash seeds if desired.

Notes

  • If the soup is too thin, leave the slow cooker uncovered and continue cooking on high until thickened. For a faster option, transfer the soup to a pot and simmer uncovered on the stovetop.
  • To prep ahead, peel and chop the vegetables and combine them with the spices in the slow cooker. Refrigerate for up to 1 week or freeze for up to 6 months. Add the vegetable stock and coconut milk when ready to cook.
  • Store leftover soup in an airtight container in the freezer for up to 6 months.
  • For a stovetop version, sauté the vegetables in a little olive oil over medium-high heat until softened. Add the spices, broth, and coconut milk, then simmer for about 30 minutes, or until the squash is tender. Blend until smooth.
