Description

This Slow Cooker Creamy Sausage and Tortellini Soup is hearty, cheesy, and packed with Italian flavors—perfect for an easy weeknight meal.


Ingredients

  • 1 pound Italian sausage, mild or spicy
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 14.5 ounces can diced tomatoes, undrained
  • 8 ounces cream cheese
  • 9 ounces refrigerated cheese tortellini
  • 2 cups fresh spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving (optional)


Instructions

  1. Brown the Italian sausage in a skillet over medium heat. Drain excess fat and add to the slow cooker.
  2. Add diced onion, garlic, chicken broth, diced tomatoes, and Italian seasoning to the slow cooker.
  3. Cover and cook on low for 4–5 hours or on high for 2–3 hours.
  4. About 15 minutes before serving, stir in cream cheese until melted and smooth.
  5. Add refrigerated tortellini and chopped spinach, cooking until tortellini is tender and spinach is wilted.
  6. Season with salt and pepper to taste.
  7. Serve hot with grated Parmesan cheese if desired.

Notes

  • Use spicy Italian sausage for extra heat.
  • Frozen tortellini can be used, adding a few extra minutes of cooking time.
  • Spinach can be substituted with kale or other leafy greens.
