This Slow Cooker Creamy Sausage and Tortellini Soup is hearty, cheesy, and packed with Italian flavors—perfect for an easy weeknight meal.
Ingredients
- 1 pound Italian sausage, mild or spicy
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 14.5 ounces can diced tomatoes, undrained
- 8 ounces cream cheese
- 9 ounces refrigerated cheese tortellini
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- Brown the Italian sausage in a skillet over medium heat. Drain excess fat and add to the slow cooker.
- Add diced onion, garlic, chicken broth, diced tomatoes, and Italian seasoning to the slow cooker.
- Cover and cook on low for 4–5 hours or on high for 2–3 hours.
- About 15 minutes before serving, stir in cream cheese until melted and smooth.
- Add refrigerated tortellini and chopped spinach, cooking until tortellini is tender and spinach is wilted.
- Season with salt and pepper to taste.
- Serve hot with grated Parmesan cheese if desired.
Notes
- Use spicy Italian sausage for extra heat.
- Frozen tortellini can be used, adding a few extra minutes of cooking time.
- Spinach can be substituted with kale or other leafy greens.
