Description
This Slow Cooker Honey Garlic Chicken and Vegetables is sweet, savory, and effortlessly delicious. Tender chicken thighs simmer with vegetables in a rich honey garlic sauce for a complete one-pot meal.
Ingredients
- 8 bone-in, skin-on chicken thighs
- 16 ounces baby red potatoes, halved
- 16 ounces baby carrots
- 16 ounces green beans, trimmed
- 2 tablespoons chopped fresh parsley leaves
- 1/2 cup reduced sodium soy sauce
- 1/2 cup honey
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon ground black pepper
Instructions
- Place potatoes, carrots, and green beans in the bottom of the slow cooker.
- Arrange chicken thighs on top of the vegetables.
- In a small bowl, whisk together soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes, and black pepper.
- Pour the sauce evenly over the chicken and vegetables.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
- Garnish with fresh parsley before serving.
Notes
- For a thicker sauce, remove 1/2 cup of cooking liquid and mix with 1 tablespoon cornstarch. Stir back in and heat for 10 minutes.
- Boneless chicken thighs work too but may cook faster.
- Use low-sodium soy sauce to avoid an overly salty sauce.
