Description

This Slow Cooker Honey Garlic Chicken and Vegetables is sweet, savory, and effortlessly delicious. Tender chicken thighs simmer with vegetables in a rich honey garlic sauce for a complete one-pot meal.


Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 16 ounces baby red potatoes, halved
  • 16 ounces baby carrots
  • 16 ounces green beans, trimmed
  • 2 tablespoons chopped fresh parsley leaves
  • 1/2 cup reduced sodium soy sauce
  • 1/2 cup honey
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon ground black pepper


Instructions

  1. Place potatoes, carrots, and green beans in the bottom of the slow cooker.
  2. Arrange chicken thighs on top of the vegetables.
  3. In a small bowl, whisk together soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes, and black pepper.
  4. Pour the sauce evenly over the chicken and vegetables.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
  6. Garnish with fresh parsley before serving.

Notes

  • For a thicker sauce, remove 1/2 cup of cooking liquid and mix with 1 tablespoon cornstarch. Stir back in and heat for 10 minutes.
  • Boneless chicken thighs work too but may cook faster.
  • Use low-sodium soy sauce to avoid an overly salty sauce.
