This hearty Slow Cooker Savory Beef & Mushroom Casserole is a perfect comfort food for any occasion, combining tender beef, earthy mushrooms, and flavorful herbs in a rich broth.
Ingredients
- 2 lbs Beef stew meat, cubed
- 8 oz Mushrooms, sliced
- 1 Large onion, chopped
- 4 cloves Garlic, minced
- 4 Medium potatoes, cubed
- 3 cups Beef broth
- 2 tbsp Soy sauce
- 2 tbsp Worcestershire sauce
- 1 tsp Dried thyme
- 1 tsp Dried rosemary
- 1 Bay leaf
- Salt and pepper to taste
- 2 tbsp Olive oil
- 1 cup Frozen peas (optional)
- 2 tbsp Cornstarch (optional, for thickening)
- 2 tbsp Water (optional, for thickening)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the cubed beef stew meat and brown on all sides, about 5-7 minutes. Transfer the beef to the slow cooker.
- In the same skillet, add the chopped onion and garlic; sauté until the onion is translucent, about 3-4 minutes. Add to the slow cooker.
- Layer the sliced mushrooms and cubed potatoes on top of the beef and onions in the slow cooker.
- In a bowl, mix together the beef broth, soy sauce, Worcestershire sauce, dried thyme, dried rosemary, bay leaf, salt, and pepper. Pour this mixture over the ingredients in the slow cooker.
- Cover the slow cooker with the lid and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- If using, add frozen peas during the last 30 minutes of cooking.
- For a thicker sauce, mix cornstarch and water in a small bowl to create a slurry. Stir this into the casserole about 30 minutes before serving and let it thicken.
- Remove the bay leaf before serving. Enjoy your savory beef and mushroom casserole!
Notes
For added flavor, consider marinating the beef in the soy sauce and Worcestershire sauce for a few hours before cooking.
