Description

This hearty Slow Cooker Savory Beef & Mushroom Casserole is a perfect comfort food for any occasion, combining tender beef, earthy mushrooms, and flavorful herbs in a rich broth.


Ingredients

  • 2 lbs Beef stew meat, cubed
  • 8 oz Mushrooms, sliced
  • 1 Large onion, chopped
  • 4 cloves Garlic, minced
  • 4 Medium potatoes, cubed
  • 3 cups Beef broth
  • 2 tbsp Soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • 1 Bay leaf
  • Salt and pepper to taste
  • 2 tbsp Olive oil
  • 1 cup Frozen peas (optional)
  • 2 tbsp Cornstarch (optional, for thickening)
  • 2 tbsp Water (optional, for thickening)


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the cubed beef stew meat and brown on all sides, about 5-7 minutes. Transfer the beef to the slow cooker.
  2. In the same skillet, add the chopped onion and garlic; sauté until the onion is translucent, about 3-4 minutes. Add to the slow cooker.
  3. Layer the sliced mushrooms and cubed potatoes on top of the beef and onions in the slow cooker.
  4. In a bowl, mix together the beef broth, soy sauce, Worcestershire sauce, dried thyme, dried rosemary, bay leaf, salt, and pepper. Pour this mixture over the ingredients in the slow cooker.
  5. Cover the slow cooker with the lid and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  6. If using, add frozen peas during the last 30 minutes of cooking.
  7. For a thicker sauce, mix cornstarch and water in a small bowl to create a slurry. Stir this into the casserole about 30 minutes before serving and let it thicken.
  8. Remove the bay leaf before serving. Enjoy your savory beef and mushroom casserole!

Notes

For added flavor, consider marinating the beef in the soy sauce and Worcestershire sauce for a few hours before cooking.
