Slow Cooker Sweet Potato and Lentil Tikka Masala is a hearty vegan one-pot meal packed with warm spices, creamy coconut milk, and rich tomato flavor. Perfect for busy weeknights and cozy dinners.
Ingredients
- Cooking spray
- 1 cup chopped onion
- 4 garlic cloves, minced
- 4 cups sweet potato, peeled and cubed
- 1 cup dried red lentils
- 1 tablespoon garam masala
- 2 teaspoons curry powder
- 1 teaspoon ground ginger
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 (6 oz) can tomato paste
- 1 quart vegetable broth
- 1 (13.5 oz) can light coconut milk
- Cooked rice (for serving)
- Fresh cilantro or basil (optional garnish)
- Grilled pita (optional)
- Dollop of yogurt (optional)
Instructions
- Lightly coat slow cooker with cooking spray.
- Add onion, garlic, sweet potato, lentils, spices, salt, pepper, tomato paste, and vegetable broth.
- Stir everything until well combined.
- Cover and cook on LOW for 8 hours until sweet potatoes and lentils are tender.
- Stir in coconut milk and let sit for 5 minutes.
- Serve over rice and garnish with cilantro or basil and pita if desired.
Notes
- Do not add coconut milk at the beginning to prevent curdling.
- Great for meal prep and freezes well.
- Adjust spice level by increasing curry powder or adding chili flakes.
