Description

Slow Cooker Sweet Potato and Lentil Tikka Masala is a hearty vegan one-pot meal packed with warm spices, creamy coconut milk, and rich tomato flavor. Perfect for busy weeknights and cozy dinners.


Ingredients

  • Cooking spray
  • 1 cup chopped onion
  • 4 garlic cloves, minced
  • 4 cups sweet potato, peeled and cubed
  • 1 cup dried red lentils
  • 1 tablespoon garam masala
  • 2 teaspoons curry powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 (6 oz) can tomato paste
  • 1 quart vegetable broth
  • 1 (13.5 oz) can light coconut milk
  • Cooked rice (for serving)
  • Fresh cilantro or basil (optional garnish)
  • Grilled pita (optional)
  • Dollop of yogurt (optional)


Instructions

  1. Lightly coat slow cooker with cooking spray.
  2. Add onion, garlic, sweet potato, lentils, spices, salt, pepper, tomato paste, and vegetable broth.
  3. Stir everything until well combined.
  4. Cover and cook on LOW for 8 hours until sweet potatoes and lentils are tender.
  5. Stir in coconut milk and let sit for 5 minutes.
  6. Serve over rice and garnish with cilantro or basil and pita if desired.

Notes

  • Do not add coconut milk at the beginning to prevent curdling.
  • Great for meal prep and freezes well.
  • Adjust spice level by increasing curry powder or adding chili flakes.
