This Spinach Garlic Meatballs recipe is a comforting dish everyone will love, combining vibrant spinach, rich garlic flavor, and gooey mozzarella centers for an irresistible dinner.
Ingredients
- 1 lb ground beef or turkey
- 2 cups fresh spinach, sautéed and finely chopped
- 4 cloves garlic, minced
- 1 small onion, finely chopped (optional)
- 1 large egg
- 1 cup breadcrumbs (or oats / almond flour)
- 1/2 cup grated Parmesan cheese
- 8 oz low-moisture mozzarella, cubed and chilled
- 1 tbsp Italian seasoning
- Salt, to taste
- Pepper, to taste
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp chopped parsley (optional)
Instructions
- Sauté spinach and garlic in a skillet over medium heat until wilted, about 3–4 minutes. Let cool, then finely chop.
- In a mixing bowl, combine ground meat, egg, breadcrumbs, Parmesan, Italian seasoning, salt, pepper, onion, and chopped spinach. Mix gently.
- Wrap the meat mixture around chilled mozzarella cubes, sealing completely to form meatballs.
- Bake at 400°F (200°C) for 20–25 minutes, or pan-sear in oil over medium-high heat for 6–8 minutes per side.
- Optionally simmer cooked meatballs in warm marinara sauce for 5–10 minutes.
- Rest meatballs for 5 minutes before serving.
