Description

My Grandmother’s Spinach Rockefeller Casserole is a creamy baked spinach dish topped with a brown, crispy Parmesan breadcrumb crust. A comforting holiday side that pairs beautifully with beef or lamb.


Ingredients

  • 2 boxes frozen chopped spinach
  • 1/4 cup water
  • 3 slices white bread, crusts removed, torn into pieces
  • 1/2 cup butter (1 stick)
  • 1 teaspoon celery salt
  • 1 1/2 teaspoons Worcestershire sauce
  • 1/4 teaspoon garlic salt
  • 2 tablespoons butter, melted
  • 1/2 cup coarse fresh bread crumbs
  • 1/2 cup grated Parmesan


Instructions

  1. Preheat oven to 400ºF.
  2. In a medium saucepan, cook frozen spinach with 1/4 cup water, covered, stirring frequently to break it up as it cooks, about 10–15 minutes. Do NOT drain the water.
  3. Add bread pieces, butter, celery salt, Worcestershire sauce, and garlic salt. Stir until butter melts and ingredients are combined. Simmer 10 minutes, stirring frequently.
  4. In a small bowl, mix melted 2 tablespoons butter, bread crumbs, and Parmesan with a fork until crumbly.
  5. Lightly butter a small round casserole dish. Spread spinach mixture evenly in dish and smooth the top.
  6. Sprinkle breadcrumb-Parmesan topping evenly over spinach.
  7. Bake in the center of the oven for 15 minutes, until browned and bubbly.

Notes

  • Serves 4 to 6 as a side dish.
  • Spinach Rockefeller is a great side with beef, lamb, or ham.
