Description
My Grandmother’s Spinach Rockefeller Casserole is a creamy baked spinach dish topped with a brown, crispy Parmesan breadcrumb crust. A comforting holiday side that pairs beautifully with beef or lamb.
Ingredients
- 2 boxes frozen chopped spinach
- 1/4 cup water
- 3 slices white bread, crusts removed, torn into pieces
- 1/2 cup butter (1 stick)
- 1 teaspoon celery salt
- 1 1/2 teaspoons Worcestershire sauce
- 1/4 teaspoon garlic salt
- 2 tablespoons butter, melted
- 1/2 cup coarse fresh bread crumbs
- 1/2 cup grated Parmesan
Instructions
- Preheat oven to 400ºF.
- In a medium saucepan, cook frozen spinach with 1/4 cup water, covered, stirring frequently to break it up as it cooks, about 10–15 minutes. Do NOT drain the water.
- Add bread pieces, butter, celery salt, Worcestershire sauce, and garlic salt. Stir until butter melts and ingredients are combined. Simmer 10 minutes, stirring frequently.
- In a small bowl, mix melted 2 tablespoons butter, bread crumbs, and Parmesan with a fork until crumbly.
- Lightly butter a small round casserole dish. Spread spinach mixture evenly in dish and smooth the top.
- Sprinkle breadcrumb-Parmesan topping evenly over spinach.
- Bake in the center of the oven for 15 minutes, until browned and bubbly.
Notes
- Serves 4 to 6 as a side dish.
