This Steak, Shrimp, Corn & Broccoli Tray Meal is an easy one-pan dinner packed with juicy steak strips, buttery garlic shrimp, and perfectly seasoned vegetables—all roasted together for a complete, flavorful meal with minimal cleanup.

Ingredients

  • For the Steak:
  • 1 lb sirloin or ribeye steak, cut into thick strips
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • For the Shrimp:
  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp melted butter
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • Salt & pepper
  • For the Vegetables:
  • 2 cups broccoli florets
  • 2 ears corn, cut into 3–4 pieces each (or 2 cups kernels)
  • 2 tbsp olive oil
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt & pepper
  • For Serving:
  • Fresh parsley or chives
  • Lemon wedges
  • Optional: garlic butter or chimichurri drizzle

Instructions

  1. Prepare the Tray: Preheat oven to 425°F (220°C). Line a large sheet pan with foil or parchment for easy cleanup.
  2. Season the Steak: Toss steak strips with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on one side of the tray.
  3. Season the Vegetables: Mix broccoli and corn with olive oil, onion powder, paprika, salt, and pepper. Add to the opposite side of the tray.
  4. Bake: Bake for 12–14 minutes, until steak is nearly cooked and vegetables start to brown.
  5. Prepare the Shrimp: While baking, toss shrimp with melted butter, garlic, red pepper flakes, lemon juice, salt, and pepper.
  6. Add the Shrimp: Remove tray, add shrimp to the center, and return to the oven for 6–8 minutes, or until shrimp are pink and cooked through.
  7. Serve: Drizzle with garlic butter or chimichurri if desired. Garnish with parsley and lemon wedges.

Notes

  • Use jumbo shrimp for best texture.
  • Slice steak after cooking for juicier results.
  • Swap broccoli for asparagus or green beans if preferred.
