Description

This Strawberry Red Velvet Cheesecake combines a rich red velvet crust, a creamy vanilla cheesecake center, and a glossy fresh-strawberry topping. Elegant, vibrant, and perfect for celebrations!


Ingredients

For the Red Velvet Crust:

  • 2 cups crushed red velvet cake crumbs (from baked cake or store-bought)
  • 1/4 cup melted butter
  • 1 tbsp cocoa powder
  • 1 tsp sugar (optional)

For the Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/3 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

For the Strawberry Layer:

  • 2 cups fresh strawberries, chopped
  • 1/4 cup sugar
  • 1 tsp lemon zest
  • 1 tbsp cornstarch mixed with 1 tbsp water

For Topping (optional):

  • Fresh strawberries, halved
  • Whipped cream


Instructions

  1. Prepare the Crust: Combine red velvet crumbs, melted butter, cocoa powder, and sugar. Press firmly into a greased 9-inch springform pan. Chill for 10 minutes.
  2. Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Mix in sour cream, vanilla, and lemon juice. Add eggs one at a time, mixing gently. Pour filling over the crust.
  3. Bake the Cheesecake: Preheat oven to 325°F (165°C). Bake for 45–55 minutes, until edges are set and the center is slightly jiggly. Cool completely, then refrigerate 4 hours or overnight.
  4. Prepare the Strawberry Layer: In a saucepan, heat strawberries, sugar, and lemon zest until juicy. Stir in the cornstarch slurry and simmer until thickened. Let cool completely.
  5. Assemble: Spread the cooled strawberry mixture over the chilled cheesecake. Garnish with halved strawberries and whipped cream if desired.
  6. Serve: Slice and enjoy a rich, vibrant, strawberry–red velvet treat.

Notes
