Description
This Street Corn Sweet Potato Beef Bowl is a flavorful 45-minute meal made with taco-seasoned ground beef, caramelized roasted sweet potatoes, and a creamy Mexican street corn topping. Finished with avocado, fresh cilantro, lime, TajÃn, and a drizzle of hot honey, it is a satisfying and colorful dinner that’s perfect for meal prep.
Ingredients
- 1 lb 93% lean ground beef
- 3 tablespoons mild taco seasoning
- ¼ cup water
- 2 medium sweet potatoes, cubed
- Avocado oil spray
- Salt and pepper, to taste
- 2 cups cooked corn
- ½ cup low-fat cottage cheese, blended, or Greek yogurt
- 2 tablespoons avocado oil mayonnaise
- 3 tablespoons cotija cheese
- Juice and zest of 1 lime
- 1 jalapeño, finely diced (optional)
- 2–3 tablespoons chopped cilantro
- 1 avocado, cubed
- 1 teaspoon TajÃn, optional
- Hot honey, for drizzling
Instructions
- Preheat oven to 425°F. Add the cubed sweet potatoes to a baking sheet, spray lightly with avocado oil, and season with salt and pepper. Roast for 25–30 minutes, flipping halfway through, until tender and lightly caramelized.
- Heat a large skillet over medium heat and spray with avocado oil. Add the ground beef and cook, breaking it up, until browned. Season with salt and pepper, then stir in the taco seasoning and water. Simmer for 2–3 minutes until well coated and slightly saucy. Remove from heat.
- In a bowl, combine the corn, blended cottage cheese or Greek yogurt, mayonnaise, cotija cheese, lime juice and zest, jalapeño if using, cilantro, avocado, and TajÃn. Stir gently until combined and adjust seasoning as needed.
- Divide the roasted sweet potatoes and taco beef between bowls. Top with the street corn topping and finish with a drizzle of hot honey. Serve immediately.
Notes
- Store the sweet potatoes, taco beef, and street corn topping in separate airtight containers in the refrigerator for up to 4 days. Add the avocado just before serving for the best texture.
- For reheating, microwave the sweet potatoes and beef for 60–90 seconds, or until warmed through. Keep the street corn topping cold and spoon it over the warm components just before serving.
- For meal prep, portion the sweet potatoes and beef into containers and store the street corn topping separately. Assemble when ready to eat and finish with hot honey.
- For a lighter version, use 96% lean ground beef or substitute ground turkey or chicken. You can also reduce the cotija cheese or skip the avocado.
