Ingredients
- 4 large baking potatoes (russet or Yukon Gold)
- 1 lb ground beef or turkey
- 1 packet taco seasoning (or homemade)
- 1 cup shredded cheese (cheddar or mix with Monterey Jack)
- 1 cup salsa
- 1/2 cup sour cream (or Greek yogurt)
- Optional toppings: chopped tomatoes, green onions, guacamole
Instructions
- Preheat oven to 400°F (200°C). Poke potatoes with a fork and bake for 45 minutes until tender.
- While potatoes bake, brown ground beef in a skillet over medium heat.
- Add taco seasoning and a splash of water, stirring until well combined.
- Slice baked potatoes open and fluff insides with a fork.
- Stuff potatoes with seasoned meat, top with cheese, and bake a few more minutes until cheese melts.
- Top with salsa, sour cream, and optional toppings before serving.
