Description

Taco Stuffed Baked Potatoes combine fluffy baked potatoes with seasoned taco meat, melted cheese, and fresh toppings for a fun and hearty meal that everyone will love.


Ingredients

  • 4 large baking potatoes (russet or Yukon Gold)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning (or homemade)
  • 1 cup shredded cheese (cheddar or mix with Monterey Jack)
  • 1 cup salsa
  • 1/2 cup sour cream (or Greek yogurt)
  • Optional toppings: chopped tomatoes, green onions, guacamole


Instructions

  1. Preheat oven to 400°F (200°C). Poke potatoes with a fork and bake for 45 minutes until tender.
  2. While potatoes bake, brown ground beef in a skillet over medium heat.
  3. Add taco seasoning and a splash of water, stirring until well combined.
  4. Slice baked potatoes open and fluff insides with a fork.
  5. Stuff potatoes with seasoned meat, top with cheese, and bake a few more minutes until cheese melts.
  6. Top with salsa, sour cream, and optional toppings before serving.
