Description

Rich butter beans cooked with fresh tomatoes, garlic, and herbs create a luscious Tuscan-inspired dish that’s creamy, hearty, and perfect for any meal.


Ingredients

  • 2 cans butter beans, drained and rinsed
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 tsp crushed red pepper flakes
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • 1 tbsp fresh basil, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 lemon, zested and juiced


Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion until translucent, about 5 minutes.
  2. Add garlic and cook 1-2 minutes until fragrant.
  3. Stir in cherry tomatoes and crushed red pepper flakes. Cook 4-5 minutes until tomatoes soften.
  4. Add butter beans and stir to combine.
  5. Pour in vegetable broth, bring to a gentle simmer, and cook 5 minutes to marry flavors.
  6. Stir in heavy cream and Parmesan cheese. Simmer 3-4 minutes until slightly thickened.
  7. Season with salt and pepper. If too thick, add more vegetable broth as needed.
  8. Remove from heat and stir in basil, parsley, lemon zest, and lemon juice.
  9. Serve warm, garnished with additional Parmesan and herbs if desired.
