This Tzatziki Chicken Salad is a refreshing Mediterranean-inspired dish featuring tender shredded chicken tossed with creamy homemade tzatziki, crisp cucumber, fresh dill, and bright lemon juice. Perfect for lunch, meal prep, or a light dinner.
Ingredients
- 2 cups shredded rotisserie chicken
- 1 medium cucumber, grated
- 1 cup plain Greek yogurt (full-fat recommended)
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh lemon juice
- 1 garlic clove, minced
- Salt, to taste
- Black pepper, to taste
- 1/2 small red onion, diced
- Cherry tomatoes, halved (optional)
- Crumbled feta cheese (optional)
- Sliced Kalamata or green olives (optional)
- Diced avocado (optional)
- Spinach or mixed greens, for serving (optional)
Instructions
- If using rotisserie chicken, skip this step. Otherwise, preheat the oven to 375°F (190°C), season chicken breasts, bake for 25-30 minutes, then shred.
- Grate the cucumber and squeeze out as much excess moisture as possible.
- In a medium bowl, combine the grated cucumber, Greek yogurt, fresh dill, lemon juice, minced garlic, salt, and black pepper. Mix until smooth to create the tzatziki dressing.
- Place the shredded chicken in a large mixing bowl. Pour the tzatziki dressing over the chicken and gently toss until evenly coated.
- Fold in the diced red onion. If desired, add cherry tomatoes, feta cheese, olives, or avocado.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to develop.
- Serve chilled over spinach, mixed greens, in pita bread, or on its own.

- Fresh dill and lemon juice provide the best flavor.
- Removing excess moisture from the cucumber prevents a watery salad.
