Description

This Tzatziki Chicken Salad is a refreshing Mediterranean-inspired dish featuring tender shredded chicken tossed with creamy homemade tzatziki, crisp cucumber, fresh dill, and bright lemon juice. Perfect for lunch, meal prep, or a light dinner.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 medium cucumber, grated
  • 1 cup plain Greek yogurt (full-fat recommended)
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 small red onion, diced
  • Cherry tomatoes, halved (optional)
  • Crumbled feta cheese (optional)
  • Sliced Kalamata or green olives (optional)
  • Diced avocado (optional)
  • Spinach or mixed greens, for serving (optional)


Instructions

  1. If using rotisserie chicken, skip this step. Otherwise, preheat the oven to 375°F (190°C), season chicken breasts, bake for 25-30 minutes, then shred.
  2. Grate the cucumber and squeeze out as much excess moisture as possible.
  3. In a medium bowl, combine the grated cucumber, Greek yogurt, fresh dill, lemon juice, minced garlic, salt, and black pepper. Mix until smooth to create the tzatziki dressing.
  4. Place the shredded chicken in a large mixing bowl. Pour the tzatziki dressing over the chicken and gently toss until evenly coated.
  5. Fold in the diced red onion. If desired, add cherry tomatoes, feta cheese, olives, or avocado.
  6. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to develop.
  7. Serve chilled over spinach, mixed greens, in pita bread, or on its own.

Notes

  • Fresh dill and lemon juice provide the best flavor.
  • Removing excess moisture from the cucumber prevents a watery salad.
  • Adjust the seasoning to your taste before serving.
  • Store leftovers in an airtight container in the refrigerator for 2-3 days.
