Description

This easy vegan Cacciatore is packed with lentils, mushrooms, olives, capers, tomatoes, and vegetables for a hearty and flavorful meal. It is budget friendly, simple to prepare, and perfect for meal prep, family lunches, or cozy dinners.


Ingredients

  • 2 (15 oz) cans lentils, drained
  • 5 cloves garlic, roughly chopped
  • 1/2 cup onion, chopped
  • 2 (15 oz) cans chopped tomatoes
  • 1/2 cup bell pepper, chopped
  • 2 tablespoons olive oil
  • 3 oz capers, drained
  • 7 oz olives, drained and pitted
  • 1/2 cup carrots, chopped
  • 8 oz mushrooms, chopped
  • 5 oz tomato paste
  • 1 tablespoon Italian herbs
  • 1 teaspoon thyme
  • 2 teaspoons smoked paprika
  • Salt and pepper, to taste


Instructions

  1. Heat the olive oil in a pot or casserole over medium heat. Add the chopped onion and garlic and cook for 2–3 minutes, until they begin to soften.
  2. Add the bell pepper, carrots, and mushrooms. Continue cooking for about 5 minutes.
  3. Stir in the lentils, chopped tomatoes, tomato paste, olives, and capers. Season with smoked paprika, Italian herbs, thyme, salt, and pepper.
  4. Bring the mixture to a simmer and cook for another 5 minutes.
  5. Serve warm in bowls or on plates.
