Description

Ingredients
- 2 (15 oz) cans lentils, drained
- 5 cloves garlic, roughly chopped
- 1/2 cup onion, chopped
- 2 (15 oz) cans chopped tomatoes
- 1/2 cup bell pepper, chopped
- 2 tablespoons olive oil
- 3 oz capers, drained
- 7 oz olives, drained and pitted
- 1/2 cup carrots, chopped
- 8 oz mushrooms, chopped
- 5 oz tomato paste
- 1 tablespoon Italian herbs
- 1 teaspoon thyme
- 2 teaspoons smoked paprika
- Salt and pepper, to taste
Instructions
- Heat the olive oil in a pot or casserole over medium heat. Add the chopped onion and garlic and cook for 2–3 minutes, until they begin to soften.
- Add the bell pepper, carrots, and mushrooms. Continue cooking for about 5 minutes.
- Stir in the lentils, chopped tomatoes, tomato paste, olives, and capers. Season with smoked paprika, Italian herbs, thyme, salt, and pepper.
- Bring the mixture to a simmer and cook for another 5 minutes.
- Serve warm in bowls or on plates.
