Description

These Vegan Gyros are made with fluffy pita bread filled with spiced, meaty oyster mushrooms, caramelized onions, tomatoes, and cucumbers. Finish them with a generous drizzle of garlicky vegan tzatziki sauce for a flavorful Greek-inspired meal.


Ingredients

  • 1 onion, sliced
  • 1/2 tablespoon sugar, maple syrup, agave or date syrup, optional
  • 8 oz oyster mushrooms
  • 1 splash white wine or a squeeze of lemon juice
  • 1/2 tablespoon olive oil
  • 6 sprigs fresh thyme, leaves only
  • Gyros Seasoning Mix:
  • 1 tablespoon coriander
  • 1 1/2 teaspoons cumin
  • 1/2 tablespoon paprika, sweet or smoked
  • 1/2 tablespoon garlic powder
  • 3 teaspoons oregano
  • 1 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon chili powder
  • For Serving:
  • 4 flatbreads (pita bread)
  • Vegan tzatziki sauce
  • Sliced cucumbers
  • Tomatoes
  • Red onion or scallions
  • Fresh dill
  • Fries
  • Hummus


Instructions

  1. In a small bowl, whisk together all the gyros seasoning spices until combined. Store in a spice jar until needed.
  2. Heat a medium heavy-bottomed pan and cook the onion in a light drizzle of olive oil with a pinch of salt until translucent. Stir in the sugar and cover with a lid. Cook over medium-low heat until nicely caramelized, checking and stirring often to prevent burning. Transfer the caramelized onions to a bowl and reserve.
  3. Meanwhile, shred the oyster mushrooms into thin strips and add them to the skillet used for the onions. Turn the heat up and add a splash of white wine or a squeeze of lemon juice. Stir in the fresh thyme and cook until the mushrooms are wilted.
  4. Stir in 3 teaspoons of the gyro seasoning mix and continue cooking until all the moisture has evaporated, stirring often so the spices do not burn. Taste and season with sea salt and additional spice mix if desired.
  5. Optional: Transfer the mushroom filling to a broiler-proof dish, spray lightly with olive oil, and broil for a few minutes until the edges become crisp. Remove from heat and mix in the caramelized onions.
  6. Preheat the pita breads in the microwave, under the broiler, or in a dry skillet.
  7. Fold each pita into a cone and wrap some butcher paper around the bottom. Secure with kitchen twine.
  8. Fill each pita with the vegan gyro filling, cucumber, tomato, and a generous drizzle of vegan tzatziki sauce. Garnish with fresh dill and red onions if desired.

Notes

  • Vegan tzatziki sauce is an essential topping for gyros and can also be served as a dip with vegetables.
  • For variations, oyster mushrooms can be replaced with young, unripe jackfruit, tempeh, or seitan.
  • Potato flatbread can be used instead of pita bread if desired.
