Description

A light and refreshing Lemon Capellini Salad that combines zesty lemons, capellini pasta, and fresh ingredients.


Ingredients

For the Salad

  • 8 oz capellini pasta (or angel hair)
  • 2 medium lemons (juice and zest)
  • 1/4 cup extra virgin olive oil
  • 1 tsp garlic salt
  • 1 tsp black pepper
  • 1 cup diced tomatoes
  • 2 tbsp capers
  • 1/4 cup curly leaf parsley (or basil)


Instructions

  1. Cook pasta in salted boiling water for about 5 minutes. Drain and rinse under cool water.
  2. Whisk together lemon juice, olive oil, garlic salt, and black pepper in a mixing bowl.
  3. Add cooled pasta to dressing and toss. Fold in tomatoes and capers.
  4. Mix in chopped parsley and lemon zest.
  5. Serve immediately or chill up to 2 hours for flavors to meld.
