A light and refreshing Lemon Capellini Salad that combines zesty lemons, capellini pasta, and fresh ingredients.
Ingredients
For the Salad
- 8 oz capellini pasta (or angel hair)
- 2 medium lemons (juice and zest)
- 1/4 cup extra virgin olive oil
- 1 tsp garlic salt
- 1 tsp black pepper
- 1 cup diced tomatoes
- 2 tbsp capers
- 1/4 cup curly leaf parsley (or basil)
Instructions
- Cook pasta in salted boiling water for about 5 minutes. Drain and rinse under cool water.
- Whisk together lemon juice, olive oil, garlic salt, and black pepper in a mixing bowl.
- Add cooled pasta to dressing and toss. Fold in tomatoes and capers.
- Mix in chopped parsley and lemon zest.
- Serve immediately or chill up to 2 hours for flavors to meld.
