Ingredients
- 1 bag (16 oz) coleslaw mix
- 1 can (15 oz) black beans, rinsed and drained
- 1 1/2 cups canned corn, drained
- 1 medium jalapeño, seeded and finely diced
- 1 small red bell pepper, finely diced
- 3 green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon taco seasoning
- 1/2 teaspoon ground cumin
- 1 bag (9.75 oz) Chili Cheese Fritos (reserve some for topping)
Instructions
- In a large bowl, combine coleslaw mix, black beans, corn, jalapeño, bell pepper, green onions, cilantro, taco seasoning, and cumin.
- In a separate bowl, whisk sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
- Pour dressing over salad and toss gently to coat evenly.
- Fold in most of the Fritos, reserving some for topping.
- Top with remaining Fritos just before serving for maximum crunch.
