Description

Bold and Crunchy Frito Cowboy Cabbage Salad is a vibrant Tex-Mex-inspired salad loaded with crisp coleslaw mix, black beans, sweet corn, peppers, and a smoky chipotle dressing, finished with crunchy Chili Cheese Fritos for the ultimate flavor and texture explosion.


Ingredients

  • 1 bag (16 oz) coleslaw mix
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 1/2 cups canned corn, drained
  • 1 medium jalapeño, seeded and finely diced
  • 1 small red bell pepper, finely diced
  • 3 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon ground cumin
  • 1 bag (9.75 oz) Chili Cheese Fritos (reserve some for topping)


Instructions

  1. In a large bowl, combine coleslaw mix, black beans, corn, jalapeño, bell pepper, green onions, cilantro, taco seasoning, and cumin.
  2. In a separate bowl, whisk sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  3. Pour dressing over salad and toss gently to coat evenly.
  4. Fold in most of the Fritos, reserving some for topping.
  5. Top with remaining Fritos just before serving for maximum crunch.

Notes

  • Add Fritos just before serving to keep them crunchy.
  • Adjust chipotle sauce to control spice level.
  • Store salad and chips separately if making ahead.
  • For vegan version, use plant-based mayo and sour cream.
