Ingredients
- 1 ½ lbs boneless, skinless chicken breasts
- 1 ½ tsp salt (divided)
- ¾ tsp black pepper (divided)
- 1 tbsp avocado oil
- 4 tbsp salted butter
- 1 small sweet onion, diced
- 3 medium carrots, sliced
- 3 celery ribs, diced
- 4 garlic cloves, minced
- â…“ cup all-purpose flour
- 4 cups chicken broth
- 2 cups water
- 1 tbsp chicken bouillon paste
- ½ tsp dried thyme
- ½ tsp dried rosemary
- ½ tsp dried basil
- ½ tsp dried tarragon
- ½ tsp dried sage
- 1 cup whole milk
- 1 cup frozen peas
Dumplings:
- 1 ¾ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp garlic powder
- ½ tsp dried thyme
- 1 tsp salt
- ¼ tsp black pepper
- ¾ cup whole milk
- 4 tbsp salted butter, melted
- ¼ cup sour cream
Instructions
- Season chicken with salt and pepper. Sear in oil until golden on both sides, then remove and cube.
- Melt butter in pot. Add onion, carrots, and celery and cook until softened. Add garlic and cook briefly.
- Stir in flour, then gradually add broth and water until smooth and thickened.
- Add bouillon, herbs, chicken, salt, and pepper. Simmer until chicken is fully cooked.
- Mix dumpling ingredients into a thick dough.
- Drop spoonfuls of dough into simmering soup. Cover and cook until dumplings are fluffy and cooked through.
- Stir in milk and peas. Serve warm.
Notes
- Dumplings should be fully submerged while cooking.
- Do not overmix dumpling dough for best fluffiness.
