Ingredients

  • 2 tbsp olive oil
  • 2 large chicken breasts, sliced into cutlets
  • 1/2 yellow onion, diced
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1/4 cup chicken broth
  • 1.5 cups full-fat coconut cream
  • 1/4 cup lime juice
  • 1 tsp dried basil

  • Salt and black pepper to taste
  • Optional: red pepper flakes

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken cutlets with salt and pepper.
  3. Sear chicken 4 minutes per side until browned and mostly cooked. Remove and set aside.
  4. Add onion, garlic, and ginger to the pan and sauté until browned.
  5. Add chicken broth and scrape up browned bits.
  6. Stir in coconut cream, lime juice, basil, and coriander.
  7. Simmer 10 minutes until sauce thickens slightly.
  8. Add cilantro and optional red pepper flakes.
  9. Return chicken to skillet and simmer 5 more minutes until cooked through.
  10. Season to taste and serve with rice, cauliflower rice, or vegetables.
