Description

Cowboy Caviar Jalapeño Popper Cheese Log is a creamy, spicy, and colorful Tex-Mex appetizer made with cream cheese, cheddar, beans, corn, jalapeños, and fresh veggies, rolled in crunchy tortilla chips for extra texture.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup jalapeños, diced
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup crushed tortilla chips


Instructions

  1. Mix cream cheese and cheddar until smooth.
  2. Add beans, corn, tomatoes, onion, jalapeños, and seasonings.
  3. Form mixture into a log using plastic wrap.
  4. Refrigerate for at least 2 hours until firm.
  5. Roll chilled log in crushed tortilla chips.
