Description

Ingredients
- 2 cans sweet corn, drained
- 1 can black beans, drained
- 1 can Rotel tomatoes, drained
- 1 bell pepper, diced
- 1 cup shredded cheddar cheese
- 1 bag Fritos (add just before serving)
- Sour cream
- Olive oil
- Salt
- Pepper
- Garlic powder
- Onion powder
- Cumin
Instructions
- Whisk sour cream, olive oil, and seasonings to make dressing.
- Combine corn, beans, Rotel, bell pepper, and cheese in a bowl.
- Mix in dressing until evenly coated.
- Fold in Fritos just before serving.
- Serve chilled or immediately.
