Description

This Whole30 taco casserole is a hearty, veggie-packed, and flavorful beef bake perfect for meal prep or weeknight dinners. It’s gluten-free, paleo-friendly, and loaded with bold taco flavors.


Ingredients

  • 2 lbs lean ground beef (halal)
  • 2 tsp chili powder
  • 1 1/2 tsp cumin
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 2 tbsp minced garlic
  • 1 medium white onion, diced
  • 2 green bell peppers, diced
  • 2 medium russet potatoes, small dice
  • 3/4 cup salsa (no sugar added)
  • 1 (4 oz) can green chiles, drained
  • 1 (4 oz) can black olives, sliced and drained
  • 1 (14 oz) can diced tomatoes, drained
  • 2 eggs, beaten


Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a large skillet, brown ground beef over medium heat.
  3. Add garlic and onion while cooking and mix well.
  4. In a large casserole dish, combine green peppers, potatoes, salsa, green chiles, olives, and diced tomatoes.
  5. Drain excess grease from beef, then return to pan and mix in spices.
  6. Transfer beef mixture into casserole dish.
  7. Add beaten eggs and mix everything thoroughly.
  8. Cover with foil and bake for 45–60 minutes until potatoes are tender.
  9. Serve with avocado, lettuce, or your favorite toppings.

Notes

  • Drain canned ingredients well to avoid excess liquid.
  • Cover tightly while baking for best texture.
