This Whole30 taco casserole is a hearty, veggie-packed, and flavorful beef bake perfect for meal prep or weeknight dinners. It’s gluten-free, paleo-friendly, and loaded with bold taco flavors.
Ingredients
- 2 lbs lean ground beef (halal)
- 2 tsp chili powder
- 1 1/2 tsp cumin
- 2 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 2 tbsp minced garlic
- 1 medium white onion, diced
- 2 green bell peppers, diced
- 2 medium russet potatoes, small dice
- 3/4 cup salsa (no sugar added)
- 1 (4 oz) can green chiles, drained
- 1 (4 oz) can black olives, sliced and drained
- 1 (14 oz) can diced tomatoes, drained
- 2 eggs, beaten
Instructions
- Preheat oven to 350°F (180°C).
- In a large skillet, brown ground beef over medium heat.
- Add garlic and onion while cooking and mix well.
- In a large casserole dish, combine green peppers, potatoes, salsa, green chiles, olives, and diced tomatoes.
- Drain excess grease from beef, then return to pan and mix in spices.
- Transfer beef mixture into casserole dish.
- Add beaten eggs and mix everything thoroughly.
- Cover with foil and bake for 45–60 minutes until potatoes are tender.
- Serve with avocado, lettuce, or your favorite toppings.
Notes
- Drain canned ingredients well to avoid excess liquid.
- Cover tightly while baking for best texture.
