Description
This Whole30 taco soup is a healthy, flavorful, and family-friendly chicken soup made with vegetables, warm spices, and lime. It is gluten-free, dairy-free, paleo, and low-carb friendly.
Ingredients
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 bell peppers, diced
- 3 garlic cloves, minced
- 1 lb boneless skinless chicken breast
- 1 tsp sea salt
- 1 tsp dried oregano
- 1 tsp paprika
- 1/4 tsp chili powder
- 1/2 tbsp cumin
- 1/2 tsp black pepper
- 1 (15 oz) can diced tomatoes
- 1/2 cup chopped green chilies
- Juice of 2 limes
- 4 cups chicken broth
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell peppers. Sauté until softened.
- Add chicken, tomatoes, green chilies, spices, broth, and lime juice.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Remove chicken, shred with forks, and return to pot.
- Simmer for another 5 minutes.
- Serve hot with optional toppings like cilantro, avocado, and lime.
Notes
- Optional toppings: avocado, cilantro, lime wedges, diced onion.
- Not Whole30 compliant toppings include cheese, sour cream, and tortilla chips.
- Chicken can be substituted with turkey if desired.
