Description

This Whole30 taco soup is a healthy, flavorful, and family-friendly chicken soup made with vegetables, warm spices, and lime. It is gluten-free, dairy-free, paleo, and low-carb friendly.


Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 bell peppers, diced
  • 3 garlic cloves, minced
  • 1 lb boneless skinless chicken breast
  • 1 tsp sea salt
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/4 tsp chili powder
  • 1/2 tbsp cumin
  • 1/2 tsp black pepper
  • 1 (15 oz) can diced tomatoes
  • 1/2 cup chopped green chilies
  • Juice of 2 limes
  • 4 cups chicken broth


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell peppers. Sauté until softened.
  3. Add chicken, tomatoes, green chilies, spices, broth, and lime juice.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Remove chicken, shred with forks, and return to pot.
  6. Simmer for another 5 minutes.
  7. Serve hot with optional toppings like cilantro, avocado, and lime.

Notes

  • Optional toppings: avocado, cilantro, lime wedges, diced onion.
  • Not Whole30 compliant toppings include cheese, sour cream, and tortilla chips.
  • Chicken can be substituted with turkey if desired.
