Ingredients
- 1 pound chicken breasts, pounded to even thickness
- 2 tablespoons olive oil
- 2 tablespoons lime juice (about 1 lime)
- Zest of 1 lime
- 1 teaspoon chili powder
- 1 teaspoon brown sugar
- 3/4 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- Optional: 1/4 teaspoon chipotle chili powder
- 2 medium avocados, chopped
- 1 cup cherry tomatoes, quartered
- 1 cup fresh corn kernels
- 1/3 cup red onion, finely chopped
- 1/2 red bell pepper, chopped
- 1 jalapeño, diced
- 2 tablespoons cilantro, chopped
- 1 garlic clove, minced
- 2 tablespoons lime juice (for salsa)
- 1/4 teaspoon cumin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- Mix olive oil, lime juice, zest, and spices to create the chicken rub.
- Coat chicken evenly and let sit for 30 minutes (or up to 8 hours for deeper flavor).
- For salsa, mix all ingredients except avocado and chill.
- Heat grill pan or skillet over medium-high heat.
- Cook chicken 3–5 minutes per side until browned and cooked through.
- Let chicken rest 5 minutes before slicing.
- Fold avocado into salsa just before serving.
- Serve chicken topped with fresh avocado salsa.
