Ingredients

  • 1 pound chicken breasts, pounded to even thickness
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (about 1 lime)
  • Zest of 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • Optional: 1/4 teaspoon chipotle chili powder
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • 1 cup fresh corn kernels
  • 1/3 cup red onion, finely chopped
  • 1/2 red bell pepper, chopped
  • 1 jalapeño, diced
  • 2 tablespoons cilantro, chopped
  • 1 garlic clove, minced
  • 2 tablespoons lime juice (for salsa)
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper


Instructions

  1. Mix olive oil, lime juice, zest, and spices to create the chicken rub.
  2. Coat chicken evenly and let sit for 30 minutes (or up to 8 hours for deeper flavor).
  3. For salsa, mix all ingredients except avocado and chill.
  4. Heat grill pan or skillet over medium-high heat.
  5. Cook chicken 3–5 minutes per side until browned and cooked through.
  6. Let chicken rest 5 minutes before slicing.
  7. Fold avocado into salsa just before serving.
  8. Serve chicken topped with fresh avocado salsa.

Notes

  • Marinating longer enhances flavor, but cooking immediately still works well.
  • Adjust jalapeño seeds for spice level.
