Ingredients
- 1.5 lb cod fillets
- 1/2 cup all-purpose flour (gluten-free alternative if needed)
- 1 tsp ground coriander
- 3/4 tsp paprika
- 3/4 tsp ground cumin
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 6 tbsp fresh lemon juice
- 5 tbsp extra virgin olive oil
- 2 tbsp butter
- 6 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
Instructions
- Pat cod dry and mix flour with spices in a bowl.
- Preheat oven to 400°F (200°C).
- Whisk lemon juice, olive oil, butter, and garlic to make sauce.
- Dip cod in sauce, then coat in flour-spice mix.
- Sear cod in hot skillet for 2 minutes per side until golden.
- Pour remaining sauce over fish and transfer skillet to oven.
- Bake 8–10 minutes until fish flakes easily.
- Garnish with parsley and serve warm with pan juices.
