Ingredients

  • 1.5 lb cod fillets
  • 1/2 cup all-purpose flour (gluten-free alternative if needed)
  • 1 tsp ground coriander
  • 3/4 tsp paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 6 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil
  • 2 tbsp butter
  • 6 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Pat cod dry and mix flour with spices in a bowl.
  2. Preheat oven to 400°F (200°C).
  3. Whisk lemon juice, olive oil, butter, and garlic to make sauce.
  4. Dip cod in sauce, then coat in flour-spice mix.
  5. Sear cod in hot skillet for 2 minutes per side until golden.
  6. Pour remaining sauce over fish and transfer skillet to oven.
  7. Bake 8–10 minutes until fish flakes easily.
  8. Garnish with parsley and serve warm with pan juices.
