Description
This Gnocchi Bolognese is a rich, comforting, and quick 40-minute dinner made with crispy seared gnocchi tossed in a hearty beef and tomato sauce. A cozy Italian-inspired meal perfect for weeknights.
Ingredients
- 3–4 tablespoons olive oil, divided
- 1 pound ground beef (85/15)
- 1 pound potato gnocchi
- 1 cup water, divided
- 1 teaspoon red pepper flakes
- 1 shallot, finely chopped
- 3 tablespoons tomato paste
- 1 pint cherry tomatoes
- 4 cloves garlic, minced
- ¾ teaspoon dried oregano
- 1 teaspoon salt
- ¼ teaspoon black pepper
- Parmesan cheese (optional, for serving)
- Fresh parsley (optional, for serving)
Instructions
- Cook ground beef in a skillet over medium heat until browned and crispy. Remove and set aside.
- Sear gnocchi in olive oil until golden, then add a little water and cook until tender. Set aside.
- In another pan, heat olive oil and red pepper flakes, then sauté shallots.
- Add tomato paste and cook briefly, then add water gradually to form sauce.
- Add cherry tomatoes and cook until soft, then smash them into the sauce.
- Add garlic, oregano, salt, and pepper and simmer.
- Return beef and gnocchi to the sauce and mix well.
- Serve topped with Parmesan and parsley if desired.
Notes
- Use shelf-stable, refrigerated, or frozen gnocchi.
- Ground turkey can be substituted for beef.
- Make sauce ahead for faster cooking.
- Store leftovers up to 3 days in the fridge.
