Description

This Gnocchi Bolognese is a rich, comforting, and quick 40-minute dinner made with crispy seared gnocchi tossed in a hearty beef and tomato sauce. A cozy Italian-inspired meal perfect for weeknights.


Ingredients

  • 34 tablespoons olive oil, divided
  • 1 pound ground beef (85/15)
  • 1 pound potato gnocchi
  • 1 cup water, divided
  • 1 teaspoon red pepper flakes
  • 1 shallot, finely chopped
  • 3 tablespoons tomato paste
  • 1 pint cherry tomatoes
  • 4 cloves garlic, minced
  • ¾ teaspoon dried oregano
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • Parmesan cheese (optional, for serving)
  • Fresh parsley (optional, for serving)


Instructions

  1. Cook ground beef in a skillet over medium heat until browned and crispy. Remove and set aside.
  2. Sear gnocchi in olive oil until golden, then add a little water and cook until tender. Set aside.
  3. In another pan, heat olive oil and red pepper flakes, then sauté shallots.
  4. Add tomato paste and cook briefly, then add water gradually to form sauce.
  5. Add cherry tomatoes and cook until soft, then smash them into the sauce.
  6. Add garlic, oregano, salt, and pepper and simmer.
  7. Return beef and gnocchi to the sauce and mix well.
  8. Serve topped with Parmesan and parsley if desired.

Notes

  • Use shelf-stable, refrigerated, or frozen gnocchi.
  • Ground turkey can be substituted for beef.
  • Make sauce ahead for faster cooking.
  • Store leftovers up to 3 days in the fridge.
