Description
This Ground Turkey Sweet Potato Skillet is a hearty, healthy one-pan meal loaded with lean turkey, sweet potatoes, beans, corn, and bold spices. Perfect for easy weeknight dinners and meal prep.
Ingredients
- 4 tablespoons avocado oil, divided
- 1 pound ground turkey
- 5 cups sweet potatoes, peeled and diced
- 3 garlic cloves, minced
- 1 medium sweet onion, diced
- 1 red bell pepper, diced
- 1 pound tomatoes, diced
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 tablespoon salt
- 1 ½ teaspoons black pepper
- ¼ teaspoon cayenne pepper
- 1 (15.25-ounce) can corn, drained
- 1 (15.5-ounce) can black beans, drained and rinsed
- ½ cup fresh cilantro, chopped (plus more for serving)
- 1 cup shredded Monterey Jack cheese
Instructions
- Heat 2 tablespoons avocado oil in a large skillet over medium heat. Cook ground turkey until browned, about 7–8 minutes. Remove and set aside.
- Add remaining oil and garlic to the skillet. Cook for 30 seconds.
- Add sweet potatoes, onion, bell pepper, paprika, cumin, salt, pepper, and cayenne. Stir, cover, and cook 15–20 minutes until tender.
- Return turkey to skillet. Add corn, black beans, tomatoes, and cilantro. Stir and cook 5–7 minutes until heated through.
- Top with shredded cheese and extra cilantro before serving.
Notes
- Dice sweet potatoes evenly for best cooking results.
- Adjust spice level by increasing or removing cayenne.
- Store leftovers in fridge for up to 4 days or freeze for 3–4 months.
