Description

This Ground Turkey Sweet Potato Skillet is a hearty, healthy one-pan meal loaded with lean turkey, sweet potatoes, beans, corn, and bold spices. Perfect for easy weeknight dinners and meal prep.


Ingredients

  • 4 tablespoons avocado oil, divided
  • 1 pound ground turkey
  • 5 cups sweet potatoes, peeled and diced
  • 3 garlic cloves, minced
  • 1 medium sweet onion, diced
  • 1 red bell pepper, diced
  • 1 pound tomatoes, diced
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • 1 tablespoon salt
  • 1 ½ teaspoons black pepper
  • ¼ teaspoon cayenne pepper
  • 1 (15.25-ounce) can corn, drained
  • 1 (15.5-ounce) can black beans, drained and rinsed
  • ½ cup fresh cilantro, chopped (plus more for serving)
  • 1 cup shredded Monterey Jack cheese


Instructions

  1. Heat 2 tablespoons avocado oil in a large skillet over medium heat. Cook ground turkey until browned, about 7–8 minutes. Remove and set aside.
  2. Add remaining oil and garlic to the skillet. Cook for 30 seconds.
  3. Add sweet potatoes, onion, bell pepper, paprika, cumin, salt, pepper, and cayenne. Stir, cover, and cook 15–20 minutes until tender.
  4. Return turkey to skillet. Add corn, black beans, tomatoes, and cilantro. Stir and cook 5–7 minutes until heated through.
  5. Top with shredded cheese and extra cilantro before serving.

Notes

  • Dice sweet potatoes evenly for best cooking results.
  • Adjust spice level by increasing or removing cayenne.
  • Store leftovers in fridge for up to 4 days or freeze for 3–4 months.
