Healthy Cucumber Pasta Salad is a light, refreshing, creamy pasta salad made with crisp cucumbers, tender pasta, and a tangy dill dressing—perfect for summer meals and make-ahead lunches.
Ingredients
- 8 oz penne pasta
- 1 English cucumber, diced
- 1/2 white onion, finely minced
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tbsp vinegar
- 2 tbsp fresh dill, chopped
- 1 tsp sugar
- 1/2 tsp salt
- Black pepper to taste
Instructions
- Cook pasta until al dente, then rinse under cold water and drain.
- Mix mayonnaise, sour cream, vinegar, dill, sugar, salt, and pepper to make dressing.
- Soak sliced onion in cold water to mellow flavor, then drain.
- Dice cucumber and prepare all vegetables.
- Combine pasta, cucumber, onion, and dressing in a large bowl.
- Toss until fully coated and chill for at least 40–60 minutes before serving.
Notes
- Salt cucumbers and drain for 30 minutes to prevent watery salad.
- Best served chilled after flavors meld.
- Store in fridge up to 3 days.
- Stir before serving if dressing separates slightly.
