Description

These authentic Mexican Charro Beans are rich, smoky, and deeply flavorful. Pinto beans are simmered with bacon, peppers, tomatoes, and spices for a hearty traditional dish perfect as a side or main meal.


Ingredients

  • 1 lb dried pinto beans
  • 12 oz bacon, chopped
  • 1 small onion, chopped
  • 1 jalapeño pepper, minced (or serrano for extra heat)
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 1 (15 oz) can fire-roasted tomatoes
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 bunch cilantro, chopped
  • Salt to taste


Instructions

  1. Rinse beans and soak overnight, then drain.
  2. Cook bacon in a large pot until crispy. Remove and set aside.
  3. Sauté onion and jalapeño in bacon fat until soft.
  4. Add garlic and cook until fragrant.
  5. Add beans, broth, and water. Bring to a boil.
  6. Reduce heat and simmer 45 minutes until beans begin to soften.
  7. Add tomatoes, spices, bacon, and cilantro.
  8. Simmer uncovered for 30 minutes until beans are tender and broth thickens.
  9. Season with salt and serve hot with extra cilantro.

Notes

  • Do not salt beans until fully tender.
  • Add hot water if beans dry out while cooking.
  • Instant Pot and slow cooker versions work great for convenience.
