Description

Paleo stuffed pepper soup made with ground beef, bell peppers, tomatoes, and Italian seasoning for a hearty, comforting, and healthy one-pot meal.


Ingredients

  • 2 tablespoons garlic oil
  • 2 pounds ground beef
  • 1 teaspoon salt
  • 2 teaspoons Italian seasoning
  • 2 (14.5 oz) cans diced fire roasted tomatoes
  • 1 cup strained tomatoes or tomato sauce
  • 3 bell peppers, chopped
  • 1/2 cup chopped green onions
  • 1/2 cup water
  • 3 cups white rice or cauliflower rice (optional)


Instructions

  1. Heat garlic oil in a large pot or Instant Pot on sauté mode.
  2. Add ground beef, salt, and Italian seasoning. Cook until browned, breaking it apart.
  3. Add diced tomatoes, strained tomatoes, bell peppers, and green onions. Stir well.
  4. Instant Pot: Seal lid and cook on manual for 10 minutes, then release pressure.
  5. Stove Top: Simmer for 20 minutes until peppers are tender.
  6. Stir and serve hot, optionally over rice or cauliflower rice.

Notes

  • Rice is optional and not included in nutrition values.
  • For Whole30, use cauliflower rice.
  • Can be stored in fridge for up to 4 days.
