Description
Paleo stuffed pepper soup made with ground beef, bell peppers, tomatoes, and Italian seasoning for a hearty, comforting, and healthy one-pot meal.
Ingredients
- 2 tablespoons garlic oil
- 2 pounds ground beef
- 1 teaspoon salt
- 2 teaspoons Italian seasoning
- 2 (14.5 oz) cans diced fire roasted tomatoes
- 1 cup strained tomatoes or tomato sauce
- 3 bell peppers, chopped
- 1/2 cup chopped green onions
- 1/2 cup water
- 3 cups white rice or cauliflower rice (optional)
Instructions
- Heat garlic oil in a large pot or Instant Pot on sauté mode.
- Add ground beef, salt, and Italian seasoning. Cook until browned, breaking it apart.
- Add diced tomatoes, strained tomatoes, bell peppers, and green onions. Stir well.
- Instant Pot: Seal lid and cook on manual for 10 minutes, then release pressure.
- Stove Top: Simmer for 20 minutes until peppers are tender.
- Stir and serve hot, optionally over rice or cauliflower rice.
Notes
- Rice is optional and not included in nutrition values.
- For Whole30, use cauliflower rice.
- Can be stored in fridge for up to 4 days.
