Ingredients
- 4 cups cooked white rice (about 1 cup per bowl)
- 2 cups taco-seasoned ground beef
- 1 cup black beans, rinsed & drained
- 1 cup corn (canned or frozen, thawed)
- 1 cup shredded cheddar cheese
- 8 tablespoons salsa or pico de gallo
- 4 tablespoons fresh cilantro, chopped
- 1 lb lean ground beef
- 1 packet taco seasoning (or ~2 tbsp)
- 1/2 cup water
- Lime wedges (optional)
Instructions
- Cook rice according to package instructions until fluffy. Keep warm.
- In a large skillet over medium-high heat, cook ground beef until browned (5–7 minutes). Drain excess fat.
- Add taco seasoning and water. Stir and simmer for 3–5 minutes until thickened and saucy.
- Warm black beans and corn briefly if desired.
- Assemble bowls: add rice, top with seasoned beef, black beans, and corn.
- Sprinkle cheddar cheese, then add salsa and chopped cilantro.
- Serve with lime wedges if desired.
