Description

Slow Cooker Cilantro Lime Chicken is a tender, flavorful shredded chicken dish cooked in a savory tomato and spice blend with fresh cilantro and lime. Perfect for tacos, rice bowls, or meal prep, it’s an easy crockpot recipe packed with bold Mexican-inspired flavor.

Ingredients

  • 3 boneless skinless chicken breasts
  • 1 can (15 oz) tomato sauce
  • 1 bunch cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place chicken breasts into the slow cooker.
  2. Season with chili powder, cumin, garlic salt, salt, and pepper.
  3. Add chopped cilantro and pour tomato sauce over the chicken.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until chicken is tender.
  5. Shred chicken directly in the slow cooker and mix well with the sauce.
  6. Add fresh lime juice and stir to combine.
  7. Serve over rice, in tacos, or as desired.
