Description

This Slow Cooker Steak and Cheddar Potato Casserole is a hearty, comforting dish with tender beef, creamy potatoes, and gooey cheddar cheese. It’s a perfect one-pot meal for busy nights or family gatherings, providing rich flavors with minimal effort.


Ingredients

  • 1.5 lbs beef steak (chuck), cut into 1-inch cubes
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 1 cup shredded cheddar cheese
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)


Instructions

  1. Season the steak with paprika, thyme, salt, and pepper.
  2. Layer potatoes and onions in the slow cooker.
  3. Add seasoned steak on top.
  4. Mix broth, sour cream, and garlic, then pour over everything.
  5. Cook on low for 7–8 hours or high for 4–5 hours.
  6. Add cheddar cheese 15 minutes before serving and let melt.
  7. Serve hot and garnish if desired.

Notes

  • Sirloin or ribeye can replace chuck steak.
