Ingredients

  • 8 cups shredded cabbage (green or Napa)
  • 3 ears fresh sweet corn, kernels removed (or 2 cups frozen, thawed)
  • 1/4 cup minced jalapeno (adjust to taste)
  • 1/2 cup chopped fresh cilantro
  • 2 green onions, thinly sliced
  • 3/4 cup mayonnaise
  • 3 tablespoons sugar or honey
  • 2 tablespoons Dijon mustard

  2. In a separate bowl, whisk together mayonnaise, sugar (or honey), Dijon mustard, lime juice, celery seeds, and salt.
  3. Pour dressing over cabbage mixture and toss until evenly coated.
  4. Serve immediately for crunch or chill for 30 minutes for deeper flavor.
