Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb asparagus, cut into 2-inch pieces
  • 1 tablespoon olive oil or sesame oil
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with water
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons sesame seeds
  • 2 green onions, chopped
  • 2 lime wedges for serving


Instructions

  1. Pat shrimp dry and season with salt and pepper. Prep asparagus, garlic, and ginger.
  2. In a bowl, whisk together sweet chili sauce, soy sauce, honey, rice vinegar, and cornstarch slurry.
  3. Heat oil in a wok or large skillet over medium-high heat. Stir-fry asparagus for 2–3 minutes until crisp-tender, then remove.
  4. In the same pan, cook shrimp with garlic, ginger, and red pepper flakes for 4–5 minutes until shrimp turns pink.
  5. Pour sauce into the skillet and simmer for 1–2 minutes until thickened.
  6. Return asparagus to the pan and toss everything together until coated.
  7. Garnish with sesame seeds and green onions. Serve with lime wedges.
