Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb asparagus, cut into 2-inch pieces
- 1 tablespoon olive oil or sesame oil
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce or tamari
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch mixed with water
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tablespoons sesame seeds
- 2 green onions, chopped
- 2 lime wedges for serving
Instructions
- Pat shrimp dry and season with salt and pepper. Prep asparagus, garlic, and ginger.
- In a bowl, whisk together sweet chili sauce, soy sauce, honey, rice vinegar, and cornstarch slurry.
- Heat oil in a wok or large skillet over medium-high heat. Stir-fry asparagus for 2–3 minutes until crisp-tender, then remove.
- In the same pan, cook shrimp with garlic, ginger, and red pepper flakes for 4–5 minutes until shrimp turns pink.
- Pour sauce into the skillet and simmer for 1–2 minutes until thickened.
- Return asparagus to the pan and toss everything together until coated.
- Garnish with sesame seeds and green onions. Serve with lime wedges.
