Ingredients
- 4 boneless, skinless chicken thighs
- 1 1/2 cups pineapple chunks (fresh or canned, drained)
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 garlic cloves, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon chili flakes (optional)
- 2 tablespoons chopped green onions
- 1 tablespoon sesame seeds
- 1 cup diced carrots
- 2 tablespoons chopped fresh cilantro
- 2 cups cooked white rice
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a bowl, whisk soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, and chili flakes. Add chicken and marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium heat. Remove chicken from marinade and cook 4–5 minutes per side until fully cooked. Set aside.
- In the same pan, add carrots and cook for 3–4 minutes. Add pineapple and cook for 2 minutes.
- Pour in the remaining marinade and simmer until slightly thickened.
- Return chicken to the pan and coat with the glaze. Simmer 2–3 minutes.
- Serve over cooked rice and garnish with green onions, cilantro, and sesame seeds.
