Description

Tasty Pineapple Chicken and Rice is a vibrant sweet-and-savory dish featuring juicy marinated chicken thighs, caramelized pineapple, and tender vegetables served over fluffy white rice. A tropical-inspired meal perfect for busy weeknights or relaxed gatherings.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 1/2 cups pineapple chunks (fresh or canned, drained)
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon chili flakes (optional)
  • 2 tablespoons chopped green onions
  • 1 tablespoon sesame seeds
  • 1 cup diced carrots
  • 2 tablespoons chopped fresh cilantro
  • 2 cups cooked white rice
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions

  1. In a bowl, whisk soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, and chili flakes. Add chicken and marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium heat. Remove chicken from marinade and cook 4–5 minutes per side until fully cooked. Set aside.
  3. In the same pan, add carrots and cook for 3–4 minutes. Add pineapple and cook for 2 minutes.
  4. Pour in the remaining marinade and simmer until slightly thickened.
  5. Return chicken to the pan and coat with the glaze. Simmer 2–3 minutes.
  6. Serve over cooked rice and garnish with green onions, cilantro, and sesame seeds.
